white sugar????????????

the recipe i have for a flourless chocolate cake asks for white sugar... but i think that is sucrose? should i use confectioners sugar, or granulated sugar? also, for the flourless cake, i didn't buy enough of the chocolate squares... can i just mix cocoa powder and water? what else can i do to make up for the lack of chocolate???? thanks! any help is appreciated pls??? i really need this ready in a couple hours!

  2. White sugar is just regular granulated sugar. Don't substitute powdered sugar for this in a cake, just use the regular surgar.

    FLOURLESS CHOCOLATE CAKE

    1 c. unsalted butter
    4 oz. bittersweet chocolate
    3 eggs
    1/2 c. unsweetened cocoa
    3/4 c. sugar

    Preheat oven to 300 degrees. Butter the cake pan or muffin tin. Coarsely chop the chocolate and melt with butter in a double boiler over simmering water, stirring occasionally to blend. Remove from heat and let cool.
    Meanwhile, in a large bowl, beat the eggs at medium speed until thick, about 1 minute. At low speed, beat in sifted cocoa and then the sugar to partially blend. Scrape down sides of bowl with a rubber spatula. Beat mixture at high speed until thick, about 1 minute. Add the melted chocolate and beat at medium speed until blended.

    Scoop 1/3 cup batter into each muffin cup or pour into cake pan. Place muffin tin on jelly roll pan in the center of oven. Pour enough hot water into the pan to reach 1/2 inch up the sides of muffin cups. (This is not necessary for cake pan.) Bake for 20 minutes or until done. Great for those with wheat allergy
  3. when recipes call for sure it is granulated sugar, otherwise it will indicate confectioners sugar. as for the chocolate, you're really gonna have to go out and get yourself the chocolate the recipe calls for. cocoa powder contains and multitude of other ingredients to make it smooth when added to milk and water that may interfere with your recipe.
  4. use granulated sugar- Organic Demerera Sugar (sometimes called raw sugar) if you can find it because it is not quite as bad for you
