Need thick chocolate glaze please.?
I am making individual chocolate bon-bon cakes. You make a sheet cake, freeze till easy to manage.. cut into serviing pieces, place on wire rack and place one big marshmallow on top of each. Freeze again. Take them out and pour warm (not hot) glaze over the top. It is supposed to be thick enough to be opique, but thin enough to cover the whole thing. Anyone have a recipe for glaze like that?

3 Tablespoons heavy Whipping cream .
2 Tablespoons creme fraiche (optional , you can use 5 Tbl whipping cream )
4 oz bittersweet chocolate chopped fine . Must be bittersweet , it is the best .
Mix creams and Scald the mixture , Remove from heat and add the chocolate , whisk until smooth .
Adjust thickness with cream or chocolate . Add instant expresso , orange oil , almond extract , ect if you like
