- Use a moisturizer - Cetaphil works really well.
- Add 1/3 to 1/2 cup of vegetable oil to the mix.
- put more water in the mix.
- you are over cooking it... use a little oil...turn the oven down a little and bake it slow... stick toothpicks in... as long as the middle is not liquid and the crumbs are sticking to the toothpick (or knife).. your cake is good...
- Pudding! Like Pilsbury cakes they have pudding in the cake very moist!
- pour water on it
- Use apple sauce instead of oil
- Substitute applesauce instead of veg. oil.
- Don't beat the mix over 2 minutes, time it if you have to.If you go over it will be dry.
- I usually put 1/4 of butter or margarine extra, and scrape as much as I can off the measuring cup. I also put a bit extra of milk (about 4 tablespoons). I mix the sugar with the butter, beat them togheter then add the eggs...vanilla mix....all the "wet ingredients. Then I mix the dry ingredients togheter. Then I slowly pour the "wet" ingredients into the dry ingredients. The cake is ready once you stick a toothpick in it (I usually do the middle, since it takes the longest to bake). I keep the cake in the refrigerator once it's done...and If I have too much left overs, I put it in wax papper and aluminum foil and keep it in the freezer. Hope it helps...
- Try one of these three recipes: Mayonnaise Chocolate Cake, Zucchini Chocolate Cake or Flourless Chocolate Cake. Also try adding some cinnamon. It complements the flavor of the chocolate, making it more complex. If you use a box mix, try the "butter recipe" type. Also buy an oven thermometer. Your oven might not be accurate to what the dial says.
