I need a rich yummy chocolate cake recipe (to make a really big cake)?
Hi!
I'm making a big (about 4 normal cakes) chocolate cake for my nan's 70th and I'm looking for a 'to die for' chocolate cake recipe.
I used to have a great recipe which was rich and really luscious, but I can't for the life of me find it!!!
A normal recipe will do then I'll make it up 4 times. But if anyone has a recipe that's already tried and tested for a big cake - bring em on please!
Thank you.

- Triple Layer Devil's Food Cake
The Best Chocolate Cake Ever
12 servings
Ingredients
1 3/4 cups water
1 tablespoon instant espresso powder or instant coffee powder
1 cup unsweetened cocoa powder
2 1/4cups sifted all purpose flour
1 1/2 teaspoons baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1cup (2 sticks) unsalted butter room temperature
2cups firmly packed dark brown sugar (~ 1 lb)
2 large eggs
2large egg yolks
Instructions
Preheat oven to 350 degrees F. Lightly butter three 9-inch cake pans with 1 3/4 inch high sides. Line pan bottoms with waxed paper rounds. Butter paper.
Bring water and coffee powder to boil in heavy small saucepan. Remove from heat. Add cocoa and whisk until smooth. Cool completely.
Sift flour, baking powder, baking soda and salt into medium bow. Using electric mixer, beat butter in large bowl until fluffy. Add sugar in 4 additions, beating well after each addition and scraping down sides of bowl occasionally. Add eggs and yolks 1 at a time, beating just to blend after each addition. Using rubber spatula, mix dry ingredients into butter mixture alternately with cocoa mixture, beginning and ending with dry ingredients. Divide batter evenly among prepared pans. Bake until toothpick inserted into center comes out clean, about 23 minutes. Cool cakes in pans on racks 10 minutes. Turn out onto racks. Peel off waxed paper, cool completely.
(Can be prepared 1 day ahead. Return cakes to pans and cover tightly with foil. Let stand at room temperature.)
Icing
Ingredients
12 ounces bittersweet (not unsweeetened) or semisweet chocolate, chopped
1 1/4 cups (2 1/2 sticks) unsalted butter
3 tablespoons light corn syrup
3 tablespoons framboise liqueur or Grand Marnier
Instructions
Melt chocolate, butter and corn syrup in heavy medium saucepan over low heat, stirring until smooth. Stir in framboise. Cool icing until firm enough to spread, about 2 hours.
Run small sharp knife around cake pan sides to loosen. Cut cake into 2 layers using serrated knife. Place bottom cake layer on platter cut side up. Spread 2/3 cup icing over. Cover with top cake layer cut side down. Spread all but 1/2 cup icing over top and sides of cake. Refrigerate cake until icing is set, about 1 hour.
(Can be prepared 1 day ahead. Cover and refrigerate cake and remaining icing separately. Rewarm icing over low heat until just spreadable before continuing with recipe.)
- Ultimate layered chocolate cake
1 cup Valrhona cocoa; plus more
¾ cup Strong coffee; boiling
1 cup Milk; room temperature
2 ¾ cup Cake flour; not self-rising
1 teaspoon Baking soda
½ teaspoon Salt
1 ½ cup Unsalted butter; room temperature,
Plus more
2 ½ cup Sugar
1 tablespoon Pure vanilla extract
4 large Eggs; room temperature
=== ULTIMATE CHOCOLATE FROSTING ===
3 ½ cup Confectioners' sugar
1 cup Valrhona cocoa powder
12 tablespoon Unsalted butter; room temperature
½ cup Milk; room temperature
2 teaspoon Pure vanilla extract
Place rack in middle of the oven. Heat oven to 350 degrees. Butter two 8- by 2-inch round cake pans. Line with parchment paper. Butter the parchment, and dust with cocoa powder; tap out excess. Sift cocoa; whisk in boiling coffee and milk. Let cool. Sift together cake flour, baking soda, and salt. Set aside. Using a rubber spatula, mix the butter in a large bowl until light and fluffy, about 2 minutes. Gradually add sugar and vanilla. Add the eggs one at a time, stirring well after each addition. Pour in the cooled cocoa mixture. Mix until fully incorporated. Add the sifted dry ingredients to the chocolate mixture, stirring until just combined. Pour the batter into the prepared pans (about 4 cups in each pan). Bake for 20 minutes, rotate the pans, and bake for an additional 15 minutes, until a cake tester comes out clean when inserted into the center of the cake. Remove the cakes from the oven, and allow cakes to cool in pans for 15 minutes on a cooling rack. Carefully run a small offset spatula around the edge of the cakes to loosen them from the pan. Remove cakes from pans, and invert onto a wire rack. Let cool completely, about one hour. To assemble, using a serrated knife, level the top surface of each cake layer. Place four strips of parchment paper around the perimeter of the cake stand. Spread with 3/4 cup of frosting. Top with the remaining layer, bottom-side up. Using a swirling motion, cover the outside of cake with the remaining frosting. Remove parchment-paper strips. ULTIMATE CHOCOLATE FROSTING: In a small bowl, sift together the confectioners' sugar and cocoa powder. Add butter, milk, and vanilla; stir until smooth and free of lumps. - It's a piece of cake to bake a pretty cake, even if the way is hazy. You have to do the cooking by the book, you know you can't be lazy. Never use a messy recipe. The cake will end up crazy. If you do the cooking by the book, then you'll have a cake.
