- My Grandma used to make something called a Lazy Daisy cake. I'm still trying to figure out what a lazy daisy is, but it seems like something rather pleasant. Beautiful and...very still. Kind of zen, no?
Grandma’s Lazy Daisy Oatmeal Cake
¼ cup boiling water
1 cup quick or old fashioned rolled oats
½ cup butter, softened
1 cup white sugar
1 cup brown sugar
1 tsp. vanilla
2 eggs
1 ½ cups sifted flour
1 tsp. baking soda
½ tsp. salt
¾ tsp. cinnamon
¼ tsp. nutmeg
Preheat oven to 350 degrees. Pour boiling water over oats. Cover and let stand for 20 minutes. Beat butter until creamy. Gradually add sugars and beat until fluffy. Blend in vanilla and eggs. Add oat mixture and mix in all. Sift together flour, baking soda, salt, cinnamon, and nutmeg. Add to creamed mixture. Mix well. Pour batter into well greased and floured 9” square pan. Bake in 350 degree oven for 50-55 minutes. Do not remove from pan. Frost with Lazy Daisy Frosting.
